X rated for your taste buds! This recipe is a great sweet alternative to try next time those sugar cravings hit! It’s from the amazing Jo Whitton’s Quirky Cooking Cookbook.
If you haven’t got all her cookbooks yet, you really need too! It’s full of recipes for the thermomix (which I don’t have) but I have adapted the recipe to suit your nutribullet, ninja blender or whatever blender you may have.
A great post workout shake or breakfast option.
50g raw cashews, soaked, rinsed and drained (or activated) 2 medjool dates, pitted 1cm cube fresh ginger, peeled 1/8 teaspoon ground nutmeg 1/4 teaspoon ground cinnamon (1/2 teaspoon if you love cinnamon) 1/2 teaspoon natural vanilla extract 50g fresh organic baby spinach leaves or baby cos lettuce 330g unsweetened coconut water or filtered water 1 banana (100g), peeled, cut into pieces (2-3cm) and frozen 125g ice cubes
- Place cashews and dates into nutribullet and blend until chopped finely
- Add all remaining ingredients and blend until well mixed. This will depend on what type of blender you are using. I find approximately 30 seconds does the trick in the nutribullet.
- Serve immediately.
Serves 1-2 meals
Tips Soak cashews the night before and keep cubed banana in zip lock bags in the freezer for quick use in this recipe.
