Here’s our no fuss super tasty breakfast frittata! Perfect for any meal but a quick and easy dish to add to your cook up so that breakfast is all taken care of for the mornings you need to get out quickly!
1 red capsicum, chopped
1 green capsicum, chopped
1 onion, diced
1/2 teaspoon coconut oil
serving of dairy free cheese
- Set oven to 180 degrees
- Sauté capsicums, onion, tomato, mushrooms and spinach in a little coconut oil (or ghee) on a high heat.
- Beat eggs, pour into greased loaf tin
- Add sautéd vegetables to beaten eggs
- Bake for 30 minutes or until set
